Although Ecuadorian cuisine may have been overlooked in the past, the recent Culinary Cup in Guayaquil proves the flavors and unique style of food from Ecuador won’t be overlooked for much longer. With fresh fruits and vegetables, delicious ceviche, and a variety of unique ways to prepare potatoes, Ecuador is the next destination you taste buds won’t want to miss.
We are proud to announce our chefs Xavier Moncayo Chicaiza and Roberto Urgiles recently competed and placed 4th in the Culinary Cup 2014.
They artfully prepared and presented the following dishes for the competition:
Appetizer: Trilogy of octopus in red pepper sauce
Soup: Green plantain dumpling soup – this is a typical soup from Ecuador that is stuffed with meat and served in a delicious broth
Main Dish: Pistachio encrusted Swordfish with roasted vegetables provencal.
Dessert: Tree tomato stuffed with chocolate crème and amaranth crumble – tree tomato is a very popular local fruit grown in the Andes region and also known as tamarillo.

We continue to support the local economy by sourcing 60% of our food locally and hopefully help you leave the islands with a better understanding of the unique flavors of the archipelago. Our gourmet style menus are designed by the culinary talent of Chef Francisco Ventimilla, Director of the esteemed gastronomy school in Guayaquil, University Espiritu Santo.
Our chefs were able to show off their skills at the Culinary Cup and we are looking forward to them continuing to improve those while serving our guests.
